Devereux Signature Cocktails

Devereux has put together some incredible cocktails for our guests to try in the comfort of our luxury guest apartments.

Each cocktail has been inspired by its links to the Devereux story.

The classic French 75: When we were thinking of a French cocktail that would be a good link to the Devereux name, we thought where better to start than with Champagne? The French 75 was named after the rifle which the French army used during the First World War. We thought it only fitting the Classic French 75 should make the list as my great grandfather Officer Patrick J Devereux was one of those heroes from WW1.

The Brandy Alexander: This was a great favourite with our founder & CEO’s late father Seámus O'Neill.

The classic blend of brandy and chocolate smoothed with Irish cream liquor makes for the perfect combination to enjoy as the true gentleman my father was.

The Irish Coffee: This beautifully wholesome drink reminds me of winters gone by when my parents would visit my grandparents John and Patricia Devereux, sitting around the fire enjoying each others’ company and stories.

The Boston Sour: A whiskey sour is one of my personal favourites and one I enjoy after great food at a great restaurant. But this one is a little different as we use American bourbon instead and call it the Boston Sour as we tip our cap to my Great grandparents Ayre who met and married in Boston before moving back to Ireland.

The Bolivian Chuflay: This is a beautifully simplistic drink, a heady mix of ginger and Singani that will surely quench your thirst. Bolivia was a big part of our family's history when my great great great great grandfather Officer John Devereux made the arduous journey from Taghmon Co Wexford to meet with Simón Bolívar and help him win the freedom of his country - now modern day Bolivia.
